What We're Eating : Meat Jambalaya

The beauty of this dish is that you can substitute ingredients or add in whatever you like. It's a great way to use up what's in your kitchen. This is a simple version of a well-loved dish.
This recipe will take 30-minutes to cook and will serve between 4-6 people. So let's get started....
Ingredients.
- 8 Tablespoons of Olive Oil
- 1 Onion (chopped)
- 3 Mixed Peppers (Chopped)
- 2 Tablespoons of Garlic (crushed)
- 4 Links of Chorizo Sausage (sliced)
- 450g of Diced Chicken Pieces
- 2 Scotch Bonnet or Other Hot Chilli's (1 red, 1 yellow, chopped)
- 500g of Easy-Cook American Style Rice
- 1 Teaspoon of Chilli Powder
- 2 Tablespoons of Turmeric
- 2 Tablespoons of Cajun Spices
- 2 Pints of Chicken Stock or Water
- Chopped Mixed Vegetables (carrots, peas, green beans, sprouts, courgettes, Frozen will suffice)
- 450g of King Prawns or Crayfish
- Salt and Freshly Ground Black Pepper
Preperation Method.
- Heat the olive oil in a large pan and add the onion, mixed peppers, garlic, chorizo and chicken pieces. Cook for about 10 minutes.
- Add the chilli peppers (these are very hot so be careful how many you use).
- Add the rice and stir well. Now add the chilli powder, turmeric and cajun spices and mix well so that the rice is well coated with the flavours.
- Add the chicken stock or water and bring to a simmer.
- Add the mixed vegetables and bring to the boil, then turn down the heat to a simmer.
- Once the rice has swollen and is part-cooked, add the prawns or crayfish.
- Simmer for about 45 minutes to an hour. Taste for seasoning and add salt, pepper or more spices to suit your taste.
- Serve and Enjoy!
